Of fish and chips, and frying vats, of healthy steaming options.

Have you ever had one of those days when you didn't want to do the thing you usually looked forward to? Well, that's happened to me this morning. The overcast weather has given me a headache and I can't find an interesting subject on the news to think about. I've chewed two squares of candied ginger, which helped relieve the pain for a while. After I ate a peach and some prunes, I searched the online newspapers again. At last I found an article on fish and chips, which sent hunger raging through me, so I paused to eat some porridge drizzled with honey and splashed with milk. Now, I should feel better, although I could easily accommodate a serve of fish and chips.

The traditional fish and chip supper is seen by many as part of the fabric of British life. Fish coated in batter and fried, served with potato chips, makes a tasty, filling meal. Once northern English towns used lard in vats for frying and wrapped the cooked food in newspaper. Fish and chips helped prevent scurvy, rickets, malnutrition and other diseases amongst the poor in the Victorian era.

But one council has decided on a major image makeover, and has persuaded chip shops to start offering steamed fish to combat rising obesity in the area.

The move has led to raised eyebrows in Rochdale where people have eaten battered fish and chips since the 1880s.

So far, six 'chippies' in Rochdale offer steamed cod, haddock and salmon along with salads, baked potatoes and other healthy options.

I like fish, but never buy it from 'chippies'. I'd prefer something like grilled skate wing, although that's scarcely seen at the fish counter any more. I hate to think people are eating all the wild fish in the sea.

The alternative is a better option. In Scotland, fisheries breed salmon in huge underwater cages.

Which cooking method for fish appeals to you?

I do love the original fish and chips but I'm also trying fish in different, healthier recipes as well at home.

I prefer grilled to steamed. I love salmon with a mustard sauce, and also Scottish smoked salmon (part of what we call the "lox" family in the States). But I could see steamed salmon with steamed potatoes, if cooked with herbs. I rarely eat fried fish.

I think I do like the traditional method. I only eat fish and chips once in a blue moon, though.
